Ingredients:

  • 2 lb stew beef
  • 1/4 lb smoked ham, diced 
  • 4 qts chicken stock or water 
  • olive oil
  • 1/4 cup sofrito 
  • 1/4 cup minced garlic
  • 1 cup tomato sauce 
  • 1 lb pumpkin, peeled and diced in 1inch cubes 
  • 1 lb yautia, peeled and diced in 1inch cubes 
  • 1 lb ñame, peeled and diced in 1inch cubes 
  • 1 lb cassava, peeled and diced in 1inch cubes 
  • 2 medium green plantains, peeled and cut in 2inch pieces 
  • 3 ears fresh corn, cut into 1inch pieces
  • Adobo to taste
  • 2 packages sazon with culantro and achiote
  • 1 bouillon knorr creole with annatto
  • 1 qts water

        Procedure:
        In a big soup pot, combine olive oil, sofrito, garlic and saute on high heat, add beef and saute a few more minutes. Add all the ingredients, cover and bring to a boil. Reduce the heat to medium, cover, and simmer for 60 minutes or until the vegetables are cooked.

        Love this sancocho recipe

        Great recipe and easy to make, I thought it was going to be harder. The trick its to be patient, the more you leave it cooking the more everything will become like a stew, I did mashed the vegetables to make it thicker.
