Shrimp on Creole Sauce Recipe
Ingredients:
- 2 lb shrimp (raw)
- Salt to taste
- Pepper to taste
- 3 tbsp olive oil
- 1/2 red onion in squares
- 1/2 red pepper diced
- 1/2 green pepper diced
- 2 tbsp ground garlic
- 1 cup canned tomatoes with their juice
- 1/4 cup white wine
- 1 tbsp cumin
- 1 tsp paprika
- 1 cup fish broth
- Fresh recao to taste
- 1/2 lemon juice
Procedure:
Season the shrimp with salt and pepper. In a frying pan heat 3 tbsp olive oil and brown the shrimp for approx. 2 min per side, then remove the shrimp and set aside. In the same pan add a little more olive oil and saute the onion, peppers and garlic for 2 min. After this add the tomatoes and continue to saute for 2 more minutes. Add the wine, cumin, paprika and fish stock and boil the preparation for 8 min. Finish the sauce with fresh recao, lemon, salt and pepper to taste and return the shrimp to it, cook on low heat for 5 minutes and serve.
