Bienmesabe Recipe
Ingredients:
- 4 slices vanilla sponge cake
- 4 eggs
- 2 cups coconut milk
- 1 cup of sugar
- Cinnamon to taste
- Vanilla to taste
Procedure:
Separate the yolks from the whites, place the egg whites with half a cup of sugar in an electric mixer and whisk until meringue point. In a saucepan place the milk, remaining sugar, cinnamon to taste, vanilla to taste and bring to a boil. Place the yolks in a container and gradually pour the hot milk mixture over them constantly moving and return to the pan, stir over medium heat with a wooden spoon until thick, let cool and pour over the cupcakes. Place the meringue on each cake.
