Crabcakes, Empadas de Cangrejo Recipe
Ingredients:
- 1 lb crab meat
- 3 tbsp olive oil
- 1 tbsp ground garlic
- 1/4 onion in thin squares
- 1/4 red pepper in thin squares
- 1/4 green pepper in thin squares
- 1 stalk of celery in fine squares
- Salt to taste
- Pepper to taste
- 3 eggs
- 3 tbsp dijon mustard
- 1 1/2 cup crushed bread crumbs
- 1 lemon juice
- 1 tsp english sauce
- 1 tsp hot sauce
- 2 tbsp finely chopped parsley
- 1 cup flour
- Frying vegetable oil
Procedure:
In a skillet saute the garlic, onion, peppers, and celery, season to taste with salt and pepper and let cool. Then in a container mix the crab meat with the vegetables, 1 egg, mustard, 1/2 cup of crushed bread, lemon, english sauce, spicy sauce, parsley and season to taste with salt and pepper. Beat the remaining 2 eggs. Form the crab cakes by hand and then bread in flour, egg and bread crumbs, cook in vegetable oil until golden brown on both sides or approximately 2 to 3 minutes per side.
