Pork with Avocado Pico de Gallo, Cerdo con Pico de Gallo Recipe
Ingredients:
- 3 pork medallions (loin)
- Salt to taste
- Pepper to taste
- Cumin to taste
- 1 ripe avocado diced
- 1 tomato diced
- 1/4 red onion, diced
- Lemon to taste
- Cilantro fresh to taste
- Olive oil to taste
Procedure:
Season the medallions with salt, pepper and cumin and seal in a frying pan over high heat then lower the heat, cover and cook for 12 to 15 minutes. In a container mix the avocado, tomato, onion and season with lemon, cilantro, olive oil, salt and pepper to taste. Pour the pico de gallo over the pork medallions.
