Pork Fillet with Bacon, Filete de Cerdo con Bacon Recipe
Ingredients:
- 1 pork sirloin cut into medallions
- 12 bacon strips
- 2 cups potatoes cooked and cut in squares
- 1 cup fresh pineapple in small squares
- 1/2 red onion in small squares
- 1/2 green bell pepper diced
- 1/2 red bell pepper diced
- Fresh herbs to taste
- Lemon to taste
- Olive oil to taste
- Salt to taste
- Pepper to taste
Procedure:
Season the medallions with salt and pepper and wrap them with bacon. Cook in a hot frying pan with olive oil starting from the side where the ends of the bacon connect, for 10 to 12 minutes. For the salad mix all the ingredients in a container and season to taste with abundant lemon, olive oil, herbs, salt and pepper.
