Salmon with Eggplant Recipe
Ingredients:
- 4 salmon fillets
- Salt to taste
- Pepper to taste
- 2 eggplants not very thick finely sliced
- 1/2 cup of crushed bread
- 1/2 cup gruyere cheese
- 1/2 cup parmesan cheese
- 1 finely chopped onion
- 1 tsp ground garlic
- 3/4 cup white wine
- 3/4 cup fish broth
- 1/4 cup lemon juice
- 1/4 cup cream
- Fresh herbs to taste
Procedure:
Preheat oven to 350 degrees. Season the fish with salt and pepper, line up eggplant slices on top of the salmon, and season the eggplants with salt and pepper. Mix the bread, and both cheeses and pour on top of eggplants, place in a tray and bake for approx. 18 -20 minutes or until the surface is golden brown. In a frying pan sauté the onion and garlic for 2 minutes, season with salt and pepper and add the wine and reduce in half, add the broth and reduce in half add lemon and cream, cook for 2 minutes and finish with fresh herbs and salt and pepper.
