Black Bean Soup, Sopa Habichuelas Negras Recipe
Ingredients:
- 1 can 15oz goya black beans, undrained
- 2 tbsp olive oil
- 2 tbsp goya sofrito
- 1 tbsp garlic, minced
- 1 tsp oregano
- 1 tsp cumin
- 1 packet sazón goya without annatto
- 2 tbsp cooking wine
- 1 tsp white vinegar
- 1 tsp brown sugar
- 1 tsp goya adobo with pepper
- 2 bay leaves
- 1 cup water
- 1/2 cup finely chopped onions for garnish
Procedure:
In saucepan add olive oil and saute on medium high the sofrito, garlic, oregano, cumin, sazon, wine, vinegar, sugar and adobo. Add the black beans, water and bay leaves and bring to boil, lower heat and simmer uncovered until desired consistency, about 10 minutes. Discard bay leaf. Garnish with onions.
