Sancocho Recipe
Ingredients:
- 2 lb stew beef
- 1/4 lb smoked ham, diced
- 4 qts chicken stock or water
- olive oil
- 1/4 cup sofrito
- 1/4 cup minced garlic
- 1 cup tomato sauce
- 1 lb pumpkin, peeled and diced in 1inch cubes
- 1 lb yautia, peeled and diced in 1inch cubes
- 1 lb ñame, peeled and diced in 1inch cubes
- 1 lb cassava, peeled and diced in 1inch cubes
- 2 medium green plantains, peeled and cut in 2inch pieces
- 3 ears fresh corn, cut into 1inch pieces
- Adobo to taste
- 2 packages sazon with culantro and achiote
- 1 bouillon knorr creole with annatto
- 1 qts water
Procedure:
In a big soup pot, combine olive oil, sofrito, garlic and saute on high heat, add beef and saute a few more minutes. Add all the ingredients, cover and bring to a boil. Reduce the heat to medium, cover, and simmer for 60 minutes or until the vegetables are cooked.
