Sweet Rice Fritters Recipe
Ingredients:
- 1 1/4 cup med cooked rice
- 1/4 cup sugar
- 1/8 tsp salt
- 1 tsp butter softened
- 2 eggs lightly beaten
- 1/2 cup milk
- 1/2 tsp vanilla
- 2 tsp raisins (optional)
- 2/3 cup all purpose flour
- 1/2 tsp double action baking powder
- Vegetable oil for frying.
Procedure:
Combine all of the dry ingredients in a large bowl, add the milk. Beat the eggs into the mixture one at a time. Add the cheese and let the mixture sit at room temperature for at least 2 hours before frying. Heat the oil in a frying pan until hot but not smoking. Drop the fritters by spoonfuls and fry until golden brown on both sides. Drain on paper towels.
Mix all ingredients except the flour and baking powder. Mix the flour and baking powder separately then add to other ingredients to form a batter. Heat the oil in a frying pan until hot but not smoking. Drop the fritters by spoonfuls and fry until golden brown on both sides. Drain on paper towels. Serve hot maple syrup.
