Tilapia with Garlic, Tomatoes and Yautia Recipe
Ingredients:
- 4 tilapia fillets
- Salt to taste
- Pepper to taste
- 1/2 cup concasse tomato (seeded and diced)
- 1/4 sliced red onion
- 1 cup cooked and diced yautia+
- 4 cloves of garlic
- 2 sprigs of thyme
- 1/4 cup white wine
- 1/4 cup fish broth
- 1/2 lemon juice
Procedure:
Season the tilapia fillets with salt and pepper and place in a deep oven tray. Top the tilapia with tomato, onion, yautia, garlic and thyme. Mix the wine, fish broth and lemon juice and pour over the tilapia. Bake at 350 degrees for 15 minutes.
